Easy Carrot Cake

Ingredients:

  • 6 egg whites
  • 1 1/3 cups white sugar
  • 1 cup applesauce
  • 1 cup low-fat milk
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking soda
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 can crushed pineapple with juice
  • 2 cups shredded carrots
  • ½ cup chopped walnuts
  • ½ cup raisins

 

Method:

  1. Preheat oven to 175°C. Lightly grease a 22x33cm pan with cooking spray.
  2. In a large bowl, beat the egg whites. Slowly add the sugar, applesauce, milk, and vanilla extract. Sift in the dry ingredients – ground clove, nutmeg, cinnamon, baking soda, and flour. Then, one ingredient at a time, add the pineapple (with juice), carrots, walnuts, and raisins to the mixture.
  3. Pour into the prepared pan.
  4. Bake for 35 – 40 minutes in the preheated oven until a toothpick is inserted in the center and comes out clean.

 

The cake can be topped with buttercream or cream cheese icing for a healthier option.
