Preheat oven to 175°C. Lightly grease a 22x33cm pan with cooking spray.
In a large bowl, beat the egg whites. Slowly add the sugar, applesauce, milk, and vanilla extract. Sift in the dry ingredients – ground clove, nutmeg, cinnamon, baking soda, and flour. Then, one ingredient at a time, add the pineapple (with juice), carrots, walnuts, and raisins to the mixture.
Pour into the prepared pan.
Bake for 35 – 40 minutes in the preheated oven until a toothpick is inserted in the center and comes out clean.
The cake can be topped with buttercream or cream cheese icing for a healthier option.
