Avocado Baskets

2 Servings

Ingredients:
  • 1 Avocado, cut in half and pitted
  • 2 Small eggs
  • 2 Slices of bacon, cooked until crispy and cut into smaller pieces
  • Green onion or chives, sliced
  • Salt and black pepper, to taste
  • A spoonful of salsa (optional)
  • A little bit of grated cheese (optional)

 

Directions:
  • Preheat the oven to 200°C.
  • Place the avocado halves on a baking tray (rest the avocados on the side to prevent them from falling over).
  • Separate the egg yolks from the whites using an egg separator. Place the yolk into the avocado hole and fill the rest with the egg whites. If the avocado’s pit is small, make the holes bigger with a spoon. Repeat with the other avocado half.
  • Season the eggs with salt, pepper, and green onion slices. You can also sprinkle a little bit of cheese over the top.
  • Place the baking tray into the oven and bake the eggs until cooked, roughly 15 minutes.
  • Sprinkle over the bacon pieces and salsa (optional) before serving.
