1 bunch of fresh spinach (roughly 500 grams), rinsed and torn into bite-size pieces
Method:
In a large pot, bring lightly salted water to a boil. Add the penne pasta, and cook until tender (about 8 to 10 minutes).
Meanwhile, heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped bacon and cook until browned and crisp. Add the garlic and cook for about 1 minute. Stir in the tomatoes and cook until heated through.
Place the spinach in a colander and drain the hot pasta over it so it becomes wilted. Toss the pasta, remaining olive oil, bacon, and tomato mixture in a large serving bowl and enjoy!
