Spicy Apple Muffins

Ingredients:
  • 1 cup whole wheat nutty wheat flour
  • 1 tsp pumpkin pie spice
  • 1⁄2 tsp baking powder
  • 1⁄2 tsp baking soda
  • 1⁄2 tsp salt
  • 1⁄2 cup granulated sugar
  • 1⁄4 cup muscovado brown sugar
  • 1⁄4 cup soft margarine
  • large egg
  • 1⁄2 tsp vanilla essence
  • 1⁄2 cup unsweetened applesauce

 

The applesauce in the batter partially substitutes for fat and sugar while keeping the cupcakes moist and flavourful.

Method:
  • Preheat oven to 180°C.
  • Line 10 muffin cups or spray a muffin tin with a non-stick spray.
  • Using an electric mixer or wooden spoon, cream the granulated sugar, brown sugar, and margarine until fluffy in a medium-sized bowl.
  • Beat in the egg and vanilla essence.
  • Add the flour, pumpkin pie spice, baking powder, baking soda, and salt to the egg mixture and stir until combined. Then, add the applesauce.
  • Divide batter among the muffin tray and bake in a preheated oven for 20 to 25 minutes or until a toothpick comes out clean.
  • Allow the baked muffins to cool in the tray for 10 minutes before transferring them to a rack to cool completely.
